Two Ingredient Salad

  When the fridge is looking a little bare, and you need a salad….   I have this salad all the time.  It goes well with a steak for dinner or with some leftover protein (fish, chicken, steak, boiled eggs) for lunch.  Easy..     You will need: 1/2 Red Cabbage sliced finely 3 carrots grated Olive Oil drizzle Pinch of Salt and lots of cracked pepper   To Do: 1.  Toss it all together and serve.      

Banana and Honey Muffins

Great little moist yummy muffins to have on the go or as a snack.  Make a batch and keep in the freezer to take out one when you need, or good to have for kids after school.   You Will Need   Bananas x 3 Honey 1 Tablespoon Almond Flour 2 C Eggs x 2 LSA (Linseed, Sunflower Seeds, Almonds) 1/2 C Butter 50 grms Coconut Milk 1/2 C Gluten Free Baking Powder 1 teaspoon Baking Soda 1 teaspoon Cinnamon 1 teaspoon Vanilla Extract 1 teaspoon   To Do   1.  Mash bananas and then place in a food processor or mixer with the other ingredients. 2.  Process or mix until well combined and smooth and lighter in volume and colour. 3.  Spoon into well greased (with coconut oil)  muffin pans. 4.  Bake at 180 degree C until golden brown and until the muffins spring back when pressed, 20-30 minutes.   Serve warm or pop in the freezer to enjoy later.            

Chewy Chocolate Carrot Cookies

These are a favourite with kids, they have no flour and only a small amount of honey.  Great for getting some extra vegetables into your kids as well. 6 carrots cooked 1 cup shredded coconut 1 cup LSA 4 tablespoons Cacao powder 2 teaspoons cinnamon ½ cup chopped walnuts 2 tablespoons honey 1-tablespoon coconut oil Dark semi-sweet chocolate (optional)   Preheat oven to 200 C and grease an oven tray with a little butter or coconut oil. Put all the ingredients into a mixer or food processor and mix until well combined. Using a spoon place cookie dough on oven tray. Place into oven and cook for 15-20 minutes, or until golden. Place on a rack to cool.   Optional:  When the biscuits are cool, drizzle with a little dark chocolate.
